Baigan Masala is a vegetarian curry, where fried eggplant in the most delicate curry sauce, combined with aromatic spices, languishes in a special saucepan. This dish quickly gives satiety, but it does not harm the physical form. Baigan Masala is served with saffron rice or Alu Kulcha (flatbread stuffed with potatoes and spicy spices).
Dal Makani is a delicate creamy vegetarian curry made of black mash, red beans and Turkish peas (chana dal chickpeas).
